Potato pancakes – dinner for under $1

You need a bag of corn potatoes, onions, some eggs, and a ton of cooking oil. This will actually be a food that is so full of fat, starch, and cholesterol that you will feel your arteries tighten while eating it.
Peel about 2-3 times the amount of potatoes you usually eat as a side dish when they are cooked and cut them using a grater. Unfortunately we don’t have a grater so this was one of those rare situations where a food processor came in handy. Chop the onion again to taste and pour in between the potatoes.
Dispose of crushed material in a towel and soak up as much water as possible. It’s this step that will make or break the dish (and you).
Return the shreds to the bowl (or in my case the pressure cooker as it’s big enough as a bowl) and add the flour. I prefer to add a little flour and continue to add the eggs until you have a crumbly mixture, but there is a lot of room for experimentation.
Now use a skillet (I choose cast iron because it lasts forever and one can use metal utensils in it without causing damage) with a lot of oil (several table spoons for each pancake). Make a pancake the size of your palm and thumb. My first pancake wasn’t very good (the first pancake never is for some reason) but I quickly got the hang of it.
DW suggested we eat pancakes with applesauce which we did. I think mustard is also a good option.
My general opinion about this food: It’s not as healthy as french fries because of all the fat but it’s also very filling for the same reason. It takes forever to make, especially if you don’t have access to foodprocessors or baby food (Hey mom! ). I’m not sure I’ll repeat this one as I need my veins at a certain level of thru-put.
